Experience Matters

Caviar Julian was founded by Julian Puxley, whose career has included publishing international seafood titles before setting up and running a fishmonger in Greenwich, London.

Julian sourced and served caviar, often alongside oysters and sea urchin, at some of London’s best-known venues, including the Natural History Museum, Churchill War Rooms and Spencer House.

Today, that experience informs a thoughtful approach to caviar centred around quality, provenance, and a deep understanding of the product itself and how people genuinely enjoy it.

Independent DNA testing

Caviar Julian only selects caviar from which samples have been independently DNA tested following sourcing, helping to verify authenticity and traceability in a luxury food where species are closely linked to value.

Independent DNA testing verifies the caviar selected matches the species and source described, providing reassurance in a category where provenance and authenticity matter.

Mislabelled caviar can occur, whether through error or otherwise, which is why independent DNA testing is important.

It confirms traceability, supports authenticity, and gives you confidence the caviar you choose is the caviar you receive.

How to enjoy caviar

Best served cold

Best served cold

Caviar is best enjoyed without too much formality, whether from a mother of pearl spoon, from the hand, or alongside lightly salted crisps.

Warm blinis remain a classic for good reason, offering a softer, more traditional way to enjoy caviar without overpowering its flavour.

Champagne and vodka

Champagne and vodka

Champagne remains the classic caviar pairing, with its freshness, acidity, and fine bubbles bringing brightness and lift alongside the richness and silky texture of caviar.

Chilled vodka offers a cleaner, colder pairing with very little flavour of its own, meaning the character and texture of the caviar remains the focus.

Portions

A 30g tin is enough for one person to enjoy caviar generously, while larger 100g tins are popular for four. A 250g tin is well suited to entertaining groups of eight to ten.

Naturally rich in protein and a source of Omega 3, caviar is rare in that it is both healthy and light yet wonderfully indulgent.
